Kasumi is the forerunner of kitchen damascus and the popularizer of VG10 steel. The factory is based in Seki, Japan, where for generations the workshops have called on Japan's finest craftsmen. Kasumi is the oldest cutlery factory in the town of Seki, itself the capital of Japanese cutlery. Kasumi, through its products, is a heritage to be promoted and protected. The first thing you notice when you look at them is that the knives are full of Japanese design codes, combining past, present and future. The company has always worked at the top end of the cutlery market, and has always been a master of trends.


Often copied, never equalled, Kasumi has always been tried and tested, and has always responded in the best possible way, reaching a point where no-one has been able to keep up. The flagship of Kasumi's Japanese knives, the Kasumi Masterpiece range is made exclusively by Kasumi's master craftsmen with over thirty years' experience. As a tribute to these craftsmen, the range bears their name. Only these experienced craftsmen are called upon to work on this product, as the various processes and techniques used to create this range require particular expertise on many points.


A commencer par son damas issu de l’acier VG10 qui compose la lame. Cet acier fortement carburé à 1% de carbone est fabriqué dans un damas complexe en auréoles aussi appelé “en nuages”. C’est un damas difficile à obtenir et qui est plus technique que ceux à l’horizontale. Rare sont les artisans à savoir obtenir un tel résultat et dont les secrets de fabrication sont jalousement gardés. Kasumi repousse également les limites de la qualité du tranchant de ses lames en prenant soin de les affûter autrement. Les lames sont affûtées à la main sur une pierre à bande circulaire plate dont Kasumi est un des rares au Japon à utiliser ! Les couteaux passent par un double aiguisage et un double polissage permettant ainsi aux cuisiniers de pouvoir aiguiser le couteau directement sur une pierre très fine de #3000 sans passer par l’étape du grain régulier de #1000. On a donc un tranchant bien supérieur que partout ailleurs grâce à ce processus supplémentaire. Une lame si bien travaillée se doit d’être accompagnée d’un manche à son égal. Là ou Kasumi est parti sur un manche en bois de cerisier sur Kasumi Damas, ici il a utilisé du micarta, un bois très noble, très prisé dans la boiserie de luxe. C’est aussi un bois qui résiste plus efficacement aux variations de températures et au temps.
